Step 1
Grab around 50 to 100g of rice noodles and put them in a pot of hot water.
Step 2
Leave on the hob for about 5 minutes and stir often. Crumble the stock into the pot. Add soy sauce, salt and lots of pepper.
Step 3
Cut up the tofu into small blocks and add to the mix.
Step 4
Add coriander and serve in small bowls.
