Instructions
Step 1
Put pasta to cook in a sauce pan (save around 50ml of the water)
Step 2
In a pan heat some oil, add 500g chicken chunks. Sprinkle over 2 tsp smoked paprika, 1/2 tsp garlic powder, 1tsp mixed herbs & some pepper. After around 7 minutes, add in streaky smoked bacon pieces & cook until both are fully cooked. Remove from the pan but leave any leftover oil.
Step 3
Add in 200g sweetcorn with 1 tsp chilli powder & a sprinkle chilli flakes. Cook for around 3 minutes. I took half the corn out the pan for the top once it was cooked.
Step 4
Add the chicken and half the bacon back to the pan with 200ml double cream, 50ml pasta water & a generous handful of mozzarella. Leave on the heat until the cheese is melted (2-3 minutes)
Step 5
Top with the other half of the corn bacon. Add some pepper/parsley & serve!
