Instructions
Step 1
In a large bowl, beat eggs until light and foamy.
Step 2
Add oil, sugar, zucchini and vanilla to eggs
Step 3
In a second bowl, Sift flour, salt, baking soda & powder and cinnamon and mix together
Step 4
Add dry ingredients to liquid mix and blend well. Fold nuts if using at this stage
Step 5
Divide batter into 2 greased and floured bread pans.
Step 6
Bake at 325 for 1 hour.
