Step 1
Heat skillet
Step 2
Cut through each end of the steak

Add oil when skillet smokes

Season with salt and pepper (generous with pepper)

Add steaks to skillet with crushed garlic (don’t bother pealing)

Render the steak (melt the fat) and base it (spoon the oil on it) to give an even color

Remove steaks from skillet

Cut bread into cubes

Add bread to a bowl with seasonings and a drizzle of milk and let sit

Take the garlic, some anchovies and capers and grind (pestle and mortar) and make into a paste

Add 1 tsp Dijon mustard, 2 tbsp red wine vinegar and a splash of olive oil

Chop and add parsley

Heat skillet with a splash of oil for the bread to make crispy croutons

Gently squeeze the milk out of the bread cubes and add to skillet

Remove croutons from skillet and degrease them on a paper towel

Design the plate with the freshly made paste, croutons, and lamb
