2 tablespoonsvegetable oil

1 inchginger
piece, grated

2 clovesgarlic

1 cupcabbage
thinly shredded

1 teaspoonsoy sauce

1 teaspoontomato ketchup

1 teaspoonchili sauce

Instructions
Step 1
• Cook the Chowmein Noodles: • Bring a large pot of water to a boil. • Add the chowmein noodles and cook according to package instructions until al dente. • Drain the noodles and rinse them with cold water to stop the cooking process. Set aside.


Step 2
Prepare the Stir-Fry: • Heat vegetable oil in a large wok or skillet over medium-high heat. • Add the sliced onions and sauté until they turn translucent. • Stir in the minced garlic and grated ginger, cooking for another minute until fragrant. • Add the Vegetables: • Add the julienned carrots, sliced bell peppers, and shredded cabbage to the wok. • Stir-fry the vegetables for 2-3 minutes until they are slightly tender yet still crisp.









Step 3
Season the Chowmein: • In a small bowl, combine soy sauce, tomato ketchup, and chili sauce. • Pour the sauce mixture over the stir-fried vegetables and toss to coat evenly. • Season with salt and freshly ground black pepper according to your taste preference.




Step 4
Incorporate the Noodles: • Add the cooked chowmein noodles to the wok, carefully mixing them with the vegetables and sauce. • Continue stir-frying for 2-3 minutes, ensuring the noodles are well coated and heated through.

Step 5
Serve and Garnish: • Transfer the Nepali Style Chowmein to serving plates or bowls. • Garnish with freshly chopped spring onions to add a fresh, aromatic touch
