Spicy Tuna Melt (Korean Inspired)

Step 1
In a bowl, mix the drained tuna, chopped kimchi, chopped green onions, gochujang, sesame oil, 1 tbsp of mayo, and garlic powder together until well combined. Refrigerate the mixture while you prepare the grilled cheese sandwiches.

Spread a thin layer of mayo on one side of each slice of sourdough bread.

Flip the bread slice over (mayo side down) and add a generous amount of shredded mozzarella and grated Parmesan cheese on top.

Cover with the other slices of bread, mayo-side out.

Heat a pan over medium heat.
Step 6
Cook the sandwiches for about 3-4 minutes on each side, until the bread is golden and the cheese is melted.

Remove the grilled cheese sandwiches from the pan.

Carefully open each grilled cheese sandwich and add the spicy tuna mixture inside.

Close the sandwiches back up.

Cut the sandwiches in half and enjoy!

Alternatively, you can put the spicy tuna mixture inside the sandwich along with the cheeses before grilling it, just like a traditional tuna melt. Personally, I prefer adding the spicy tuna mixture after grilling because I enjoy the tuna slightly cold. The contrast of crispy warm bread, gooey cheese, and cold tuna is especially satisfying to me, but feel free to choose the method you prefer!
