Instructions

Step 1
Warm the olive oil in a pan and brown the shanks over medium-high heat.

Step 2
Chop the onion into wedges and place in a baking dish, separating into layers.

Peel the garlic. Chop the carrots into chunks. Place both in a thermomix and blend on speed 5 for 4 seconds. Add chopped mixture to the baking dish.

Mix the gravy powder, white pepper, beef stock, Worcestershire sauce, herbs, and water in a jug.
Step 5
Put the browned lamb shanks on top the carrot mixture and pour the gravy over the shanks.
Step 6
Cover well with foil and cook in oven on 140°c for 6 hours.
Step 7
Low carb: serve with steamed broccoli or broccolini. Regular: serve on mashed potato with steamed broccoli or broccolini.
