Instructions
Step 1
In a blender, combine low-fat cottage cheese, milk, roasted red peppers, Parmesan, and salt/pepper/garlic powder to taste. Blend until completely smooth

Season your chicken thighs evenly with the seasoning blend, marinate for 30 minutes, then pan fry over medium high heat until cooked through.
Step 3
Remove chicken from the pan and remove pan from heat, then pour over your cheese sauce, making sure to mix thoroughly and pick up any flavor left behind by the chicken.
Step 4
Cook the pasta according to the package instructions. Drain the pasta, reserving some pasta water. Toss the cooked pasta with the cheese sauce until combined.
Step 5
Dice your chicken then mix with your pasta, and enjoy!
