Quick and delicious! Serve with tortilla chips or on your favorite fish t I intentionally didn't include any tomato as when I do that is all I can taste. If you would like them please do! Also, using green hot sauce is a suggestion because it keeps the color of the dish nice and bright. Using red hot sauce makes the color a little muddy.

Instructions

Step 1
Place mango lengthwise up on cutting board. With narrow side facing you, cut down the length following the contour of the large, flat pit. Do the same for other side.
Step 2
Set aside flat pieces. Carefully remove the remaining peel away from the narrow strip left on either side of the pit. Then cut off the remaining mango and dice.
Step 3
Back to the two flat mango pieces that still have the peel. Holding the mango peel side DOWN in your palm, CAREFULLY score the the mango flesh (do not cut through the peel). This will make small pieces of mango (1/2" - 3/4") that are still attached to the peel.
Step 4
The mango, before being scored, fit in the cup of your palm. Now, that it is scored you can push/flip/pop the peel away so now you have a bunch of individual mango pieces that are still attached at the base to the peel.
Step 5
Carefully cut the mango pieces from the peel. The mango is super slippery so take your time.
Step 6
Mix all together in a glass, non-reactive bowl. Take care to not mash the mango. Let ingredients macerate for an hour or two in the refrigerator for best flavor.
