Pickle de Gallo is a adaption to the classic Pico de Gallo, using pickles in place of tomatoes. Chopping ingredients to the same size helps the flavors compliment each other, rather than taking over. Adjust saltiness and pepper heat according to taste. Serve with tortilla chips or as a relish.
