Instructions
Step 1
Cook the rice according to the instructions

Cook the chicken until done and set aside to rest
Step 3
In a pan add a dash of olive oil and add the onion and garlic, Sauté for a few minutes or until fragrant
Step 4
Add the tomato paste and cook until slightly caramelized, about 4 minutes
Step 5
Add the tomato and cream and let simmer for a few minutes, or until the tomato has softened
Step 6
Cut the fresh basil fine and stir to combine
Step 7
Serve over rice
Step 8
Bonus tip: serve over fresh sourdough bread
