Instructions

Step 1
Finely chop the garlic and onion,
Step 2
To a frying pan, add the oil. Bring to a medium heat, then fry the onion and garlic, along with the Chili flakes, mixed herbs and a twist of black pepper.

Corsely grate the courgette.
Step 4
Bring the pan to a high heat and add the courgette to cook down.
Step 5
Cut the halloumi into small cubes. Add these to the pan to fry,
Step 6
Meanwhile, bring a kettle to the boil and place the pasta in a pan. Cook per packet instructions.
Step 7
While the pasta is cooking, continue to fry off the courgette and colour the halloumi. When they are done, add the lemon juice and two tablespoons of pasta water to the pan.
Step 8
Also add the honey, then stir well.
Step 9
Drain the cooked pasta and mix through the sauce.
Step 10
Serve topped with toasted seeds or nuts, such as pine.
