Step 1
Mix nuts and breadcrumbs in a large bowl Heat the oil in the pan and gently fry the onion, carrots and celery for 5 minutes until soft. Add to the nut and breadcrumb mixture, together with the sage and thyme.
Step 2
Dissolve the yeast extract in the water, and add to the bowl with the soy sauce. Mix in the beaten egg.
Step 3
Put about half the nut mixture into the base of a lightly oiled 500g loaf tin. Cover with the sliced tomatoes (or jarred peppers) and parsley. Top with the rest of the mixture
Step 4
Bake in a preheated oven for 35-40mins at 180%. Serve hot or cold.
