Step 1
Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a small bowl, whisk the egg for the egg wash and set it aside.

In a mixing bowl or stand mixer, combine the ground almonds, powdered sugar, and salt.

Add the butter, egg, and almond extract to the dry ingredients and mix until a paste-like consistency forms.

Cut slits 1 inch apart from the two longer sides of the pastry rectangle, leaving a 1/2 inch border for the almond mixture.
