Ingredients

4eggs
large, beaten
2tomatoes
large, cut into 8 wedges
0.25onion
chopped
1green onion
chopped and divided
2garlic cloves
thinly sliced
3 Tbspcooking oil
divided
salt

Seasoning
Instructions
Step 1
In a small bowl, mix together soy sauce, oyster sauce, sugar, cornstarch and pepper. Combine well and set aside
Step 2
Beat eggs in a bowl, add salt to taste
Step 3
Preheat wok over medium heat. Add 2 tbsp oil and immediately add the eggs. Scrambled eggs until just set, about 40 seconds. Pour eggs back into mixing bowl and wipe out pan
Step 4
Add 1 tablespoon of oil back into the wok and turn heat to medium-high. Add garlic, green onion (white parts), onion and cook unti fragrant, about 2 mins
Step 5
Add tomato and seasoning, and cook for another 1-2 minutes until the sauce thickens to your liking
Step 6
Stir in egg and mix togetherl. Add more salt if needed, garnish with rest of green onions
