Instructions

Step 1
Make rice 1. Rinse rice 2. Follow directions to make rice. For salsa 1. Roast corn for 3-5 minutes over high heat. Then add to a bowl and let cool. 2. While corn is cooling, combine all salsa ingredients- beans, red onion, jalapeño, tomatoes, cilantro, olive oil, lime juice, salt, and garlic powder. Once combined, place in fridge. For creamy cilantro dressing 1. Blend sour cream, olive oil, lime zest, lime juice, garlic, cilantro, and salt. Once blended, place in fridge. Shrimp 1. Clean and dry shrimp without shells. 2. Add to large bowl with olive oil, and taco seasoning and combine. 3. Cook in large greased skillet over medium high heat for 2-3 minutes per side. Careful not to overcook. Assemble bowl and enjoy.
