Instructions

Feed starter

Step 1
Feed starter, take out of fridge, let sit for 3 hours

Make dough

Step 2
Combine in mixing bowl for 10 minutes with dough hook (or by hand) - makes 2 loafs!

Let sit 30 min
Step 4
Do 4 folds
Step 5
Let sit covered for 3 hours
Step 6
Punch down, shape into 2 loafs, flour the dough and basket and place in baskets, covered.
Step 7
Proof for 2-3 hours (not more!) or overnight in fridge

Bake

Step 8
Preheat oven to 475F Scour the dough before putting it in the oven. Lightly cover the bottom of the pan with avocado oil. Use cast iron pan with lids (put them in oven at around 250F).

450F for 15 min + 5 min with lid off (last time did 500 for the 15 min)

Turn off oven, open door lightly, leave in for 5-10 min (last time left for 10 min)
