Ingredients
4 servings

2chicken breasts

1 jarsalsa

1 cupfrozen corn

1 cupbasmati rice
uncooked
1can black turtle beans
1 cupshredded light cheddar

2bell peppers

1 headromaine lettuce

cumin

salt

pepper

garlic powder

smoked paprika
Instructions
Step 1
Season Chicken breasts with Cumin, smoked paprika, salt, pepper and garlic powder.
Step 2
Bake chicken breasts in oven at 350 deg C for 30 minutes or until they reach 74 deg C internal temperature
Step 3
Place chicken in fridge to cool down
Step 4
Meanwhile, wash and cook your rice as per the instructions on the bag.
Step 5
Once the rice is done cooking, add in some smoked paprika, Cumin, and garlic and mix it all together in the pan. Set aside to cool
Step 6
As the rice and chicken are in the fridge cooling, chop your lettuce and bell peppers into small bite size chunks.
Step 7
Once everything is cool enough to build, layer your ingredients as follows in meal prep containers: rice, rinsed canned beans, chicken, salsa, corn, bell peppers, lettuce, shredded cheese.
