Instructions

Step 1
Preheat your oven to 350°. Wash the zucchini and cut all four vertically. Scoop out the middle of the zucchini and pat dry.
Step 2
Shred roughly two cups of chicken (you can grab a rotisserie for simplicities sake).
Step 3
Add in all of the sour cream, then slowly add in the spaghetti sauce until you reach your desired consistency (like that of a dip).
Step 4
Seasoning your mixture and pour them into your zucchini boats, lined up in a glass baking dish.
Step 5
Top your zucchini boats with as much shredded cheese as your heart desires, followed by the grated parmesan, then the parsley.
Step 6
Bake for roughly 25 minutes and top with sriracha for an extra kick!
