Step 1
Combine water, sherry, soy sauce, sugar, ginger and sesame oil in a bowl

Heat vegetable oil in large skillet until smoking. Add asparagus and mushrooms and cook until asparagus is spotty brown, about 3-4 minutes. Add soy sauce mixture and stir twice while cooking asparagus to a crisp, 1-2 minutes. Transfer to platter, sprinkle with scallions, serve.
