Ingredients

1 lb96 % lean ground beef
½ cuponions
chopped
15 ozcan no salt added tomato sauce
1 Tbspsugar
¾ tspsalt
¼ tspblack pepper
4 cupswhole wheat noodles
uncooked measurement
1 cupfat free cottage cheese
8 ozneufchatel cheese
softened
¼ cupgreen bell pepper
diced
⅓ cupscallions
sliced
¼ cupgrated parmesan cheese
½ cupplain fat free greek yogurt
Instructions
Step 1
Brown meat and onion til tender. Drain. Stir in tomato sauce, sugar, salt and pepper. Remove from heat.
Step 2
Meanwhile, cook noodles and drain.
Step 3
Combine cottage cheese, neufchatel cheese, yogurt, green onions and green pepper.
Step 4
Lightly spray a 13 x 9 inch dish with cooking spray. Spread half the noodles in the dish. Top with a little of the meat sauce. Cover with cheese mixture. Add remaining noodles and meat sauce. Sprinkle with parmesan cheese. Bake at 350 F for 30 minutes.
