Step 1
Bring the potatoes to a boil and simmer until just tender. Remove from water with slotted spoon and reserve boiling water.

In a separate pan boil 2 eggs until the yolks are just set - 8.5 minutes from boiling
Step 3
While that’s happening prepare lettuce and divide between 2 bowls or plates. Half the tomatoes and place tomatoes, olives and tuna on top of the lettuce in separate small sections.
Step 4
When potatoes are boiled add trimmed asparagus to the boiling water and simmer for 2-3 minutes. Remove immediately and rinse under cold water.
Step 5
Peel and half the boiled eggs. Slice the potatoes. Add eggs potatoes and asparagus to the salads.
Step 6
Make the vinaigrette by shaking oil vinegar and mustard together.
Step 7
Mince shallot and chop dill. Sprinkle on top of potatoes and tuna especially. Top salads with dressing, then season!
