Instructions

Step 1
Prepare the garlic and parsley: Mix together the lemon zest, parsley, and half of the chopped garlic. Set aside.
Step 2
Sauté the garlic: Heat a large pan (like a paella pan) over medium heat. Add the olive oil and the remaining garlic. Cook for 1-2 minutes until softened.
Step 3
Add the wine: Pour in the white wine, scraping the bottom of the pan to release any browned bits. Let it reduce for about 1 minute.
Step 4
Add beans and tomatoes: Tip in the chickpeas or butter beans and the halved cherry tomatoes. Stir to combine and heat through for 5-6 minutes. Season with salt and pepper.
Step 5
Finish with lemon and parsley: Take off the heat and sprinkle with the lemon zest and parsley mix.
Step 6
Serve: Serve hot with crusty bread to mop up all the flavorful juices.
