Instructions
Step 1
Cook the pasta according to the instructions on the packet. Save approx 1.5 ladles of the pasta water.
Step 2
In a pan, heat up the olive oil and add the breadcrumbs & chilli flakes. Cook until the breadcrumbs start to brown. Remove from the pan.

Step 3
To the same pan, add the anchovy fillets with their oil, along with the minced garlic. Cook until the anchovy fillets have softened and the garlic is golden but not burnt.

Step 4
Add the cooked pasta along with approx 1 ladle of the pasta water and stir continuously until everything is combined and the pasta has a glossy look.

Step 5
Add grated lemon zest, lemon juice and the fresh parsley and stir again until everything is well combined. Take it off the heat and plate it up.

Step 6
Top with the breadcrumbs, mozzarella, more grated lemon zest, fresh parsley & grated Parmesan. Enjoy! 💛
