Instructions

Step 1
Marinate shrimp with soy sauce, black pepper, onion powder, garlic, and chili flakes. Mix until the color changes.
Step 2
Make the sauce by combining light mayo, low sugar ketchup, Sriracha, rice vinegar, ginger, paprika, and water for desired consistency. Mix until smooth.
Step 3
Cook marinated shrimp in light butter on medium heat for 2 minutes on each side until golden brown. Set aside.
Step 4
In the same pan, add chopped garlic and green onion. Cook for 2 minutes, then add peas and carrots. Mix well.
Step 5
Add eggs, stir, and cook until scrambled.
Step 6
Mix in day-old cooked rice with soy sauce, oyster sauce, and light butter.
Step 7
Add the cooked shrimp back in with green onion.
Step 8
Top with yum yum sauce, then distribute into four equal servings.
