Onion and Ricotta Stuffed Chicken Breast

Instructions
Prepare the filling:
Step 1
Heat 1 tbsp of olive oil in a pan over medium heat. Add sliced onions and sauté for 10-15 minutes, stirring frequently, until caramelized and golden brown. Add garlic and thyme, and cook for another minute.

In a bowl, combine the caramelized onions with ricotta, Parmesan, salt, pepper, and red pepper flakes. Set aside.
Prepare the chicken:

Preheat the oven to 375°F (190°C).

Butterfly the chicken breasts by slicing through the side of each one, being careful not to cut all the way through. Open each breast like a book and season the inside with salt and pepper.

Fill each chicken breast with 2-3 tablespoons of the ricotta-onion mixture, then fold it closed. Secure with toothpicks if needed.
Sear and bake the chicken:

In an oven-safe skillet, heat the remaining 1 tbsp of olive oil over medium heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden.
Step 7
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F/74°C).
Step 8
Let rest for 5 minutes before serving. Garnish with fresh parsley.
