Instructions
Step 1
Cook rice.
Step 2
Half carrot and zucchini lengthwise and thinly slice on an angle. Slice the carrot around 1-2mm thick and the zucchini 2-3mm thick.
Step 3
Thinly slice spring onion and chilli. Keep the spring onion greens and whites separate. Remove chilli seeds if you want less spice.
Step 4
Crush garlic. Combine garlic, oyster sauce, kecap manis, 2 tbsp water, soy sauce, sesame oil, and sugar to make the sauce.
Step 5
Separate the beef strips and dust with cornflour. Heat 1 tbsp oil in a large deep frying pan until very hot. Stir-fry beef for 1-2mins until browned. Remove from heat, remove from pan.
Step 6
Heat 1/2 tbsp oil over high heat. Stir-fry carrot, zucchini, spring onion whites, and chilli for 3 mins until just tender.
Step 7
Add sauce, cashews, spinach, and beef (including resting juices). Cool, stirring, for 1-2 minutes, until the spinach is wilted and the sauce is slightly thickened.
Step 8
Serve with rice and top with spring onion greens.
