Step 1
1. Open chickpeas (drain, light rinse?)

2. Cut all the ingredients to a pulp (or however you like it, i typically mince it?)

3. Add the dressing. Sometimes it requires a little extra vinegar to penetrate the chickpeas well, but l often dress it and let it sit an hour then taste it again.

a. A spoonful when you're fridge surfing

b. Over arugula (sometimes add a little more dressing)
