Noodle Ingredients
260gwheat noodles
flour stick
0.5brown onion
medium
100gcarrot

150gbroccoli
1 Tbspolive oil

Satay Sauce Marinade Ingredients
Instructions
Step 1
Start by making your marinade for the chicken by adding all of the marinade ingredients (apart from the splash of noodle water) into a bowl and mixing together.
Step 2
Slice up some chicken breast into thin strips and add into the bowl and mix together before covering and placing in the fridge for a minimum of 30 mins.
Step 3
When the chicken is ready to use, heat 1/2 tbsp of olive oil in a large frying pan or wok on high heat and add the drained chicken, leaving the rest of the sauce in the bowl for later.
Step 4
Fry, stirring occasionally for about 5-6 mins until fully cooked through and then set aside for later.
Step 5
Heat the remaining 1/2 tbsp of olive oil and add in some sliced onion, thin slices of carrot and small pieces of broccoli and stir and fry for 3-4 mins on high heat.
Step 6
Sprinkle over the seasoning and fry for another few mins.
Step 7
Reduce the heat to medium low and pour in the remaining marinade sauce which will act as the noodle sauce.
Step 8
Simmer for 5 mins to thicken.
Step 9
In the meantime, bring some water to boil and add your flour stick noodles and simmer for 1/2 mins before draining. If you use other noodles then cook according to package instructions.
Step 10
Take a splash of noodle water out of the pan and add to the veg and satay sauce to loosen up before adding in the drained cooked noodles.
Step 11
Give it a quick stir before adding the cooked chicken and then all you need to do is give everything a final stir through over heat before serving into four equal portions.
