Instructions
Step 1
Mix water, yeast and sugar and set aside to foam.
Step 2
Add additional ingredients to a large bowl.
Step 3
Add activated yeast mixture and mix to a sticky ball.
Step 4
Cover and let proof in a warm place for 4-16 hours. (Best results allowing to proof 12-16 hours).
Step 5
Remove dough from bowl to a well floured surface and shape into a ball by pulling the sides up and into the middle of the dough.
Step 6
Place on parchment paper and rub with excess flour from counter surface. Make a slice across the top for steam. Set aside to rest 15-20 min while preheating the Dutch oven in a 450 degree oven.
Step 7
Bake for 30 minutes on center rack. Then remove lid and bake an additional 10-15 mins.
Step 8
Remove from Dutch oven to a rack and let cool at least 1 hour before slicing.
