Soy-Ginger Glazed Salmon with Bok Choy

Step 1
Preheat the oven to 400 deg F (200 deg C). Line a baking sheet with parchment paper.
Step 2
In a small saucepan, combine soy sauce , ginger, garlic, and honey. Heat over medium until the mixture just starts to simmer. Remove from the heat and stir in olive oil.
Step 3
Place salmon fillets on the prepared baking sheet. Brush each fillet generously with the soy-ginger sauce.
Step 4
Bake the salmon for 12 - 15 minutes or until cooked through and flakes easily with a fork.
Step 5
While the salmon bakes, steam the chopped bok choy in a steamer for about 5 - 7 minutes until tender but still crisp.
Step 6
Serve the salmon with steamed bok choy on the side, drizzle any remaining glaze over the top, and sprinkle with sesame seeds if using.
