Pan-Seared Cod with Pine Nut Gremolata

Step 1
Season the fillets with ½ teaspoon of the salt and pepper to taste.
Step 2
Grate 1 tablespoon zest from lemon. In a small bowl, combine the zest, parsley, garlic, pine nuts, and remaining ½ teaspoon salt. Halve the lemon and set aside.
Step 3
In a large nonstick skillet, heat the oil over medium-high heat. Add the fish and cook until lightly browned on 1 side, about 3 minutes. Carefully turn the fish over. Squeeze lemon juice over the fillets and cook for 4 minutes longer, or until the fish just flakes when tested with a fork.
Step 4
Arrange the cucumber slices on 4 plates in an overlapping pattern. Lay the fillets over the cucumbers, top with the gremolata, and serve.
