Step 1
In a pan, sautée onions and garlic. Dice and add deep red soft tomatoes (and/or canned tomatoes). Add diced jalapeno. As it reduces, add salt and sugar (to taste). Add black pepper and white pepper. Add garlic powder, cumin, and allspice. Add tomato paste and red wine (optional). Let it reduce til tomatoes fall apart, but not till all liquid evaporates. Add salmon. Cover. After a few minutes, shut heat. Let it continue cooking off heat. Serve. Enjoy!
