Step 1
Heat a large pan or wok over medium heat. Add the cubed luncheon meat and cook until golden and crispy, about 5-7 minutes.

In the same pan, add the diced onion and minced garlic. Cook for 2-3 minutes until the onion softens and becomes translucent. If you need oil, add 1/2 tsp oil.

Stir in the chopped kimchi, gochujang, and sugar. Cook for 4-5 minutes, allowing the flavors to meld and the kimchi to caramelize slightly.

Add the cooked white rice to the pan, breaking up any clumps. Stir everything together to ensure the rice is evenly coated in the kimchi and gochujang mixture. You should use day old rice for the best results but pre-cooked instant rice works well too!

Drizzle the sesame oil over the rice and toss to combine.

Add in some chopped green onions and mix well. Season to taste with soy sauce/sugar/gochujang.

Remove from heat and sprinkle the chopped green onions on top. Serve immediately!
