Peanut Chicken with Noodles

Creamy peanut butter, dark sesame oil, and Japanese soba noodles give this dish a punch of protein and delicious nutty flavor. If you don't want to fire up the grill, simply poach, bake, or pan-cook the chicken. Look for soba noodles and rice vinegar in the Asian section of your supermarket or health food store. Instructions

Step 1
Cook noodles according to package directions; run under cool water and drain.
Step 2
Season chicken well with salt and pepper and toss with 1 teaspoon of the oil.
Step 3
Heat grill pan or skillet over medium-high heat; cook chicken until browned and cooked through, about 4 minutes per side.
Step 4
Transfer to a cutting board.
Step 5
Whisk together peanut butter, soy sauce, vinegar, water, and remaining oil in a large mixing bowl. Add chili oil to taste
Step 6
Thinly slice chicken and add to peanut butter mixture. Add noodles, cabbage, and scallions; toss gently to combine and serve.
