Ingredients

1 lbchicken sausage links
Italian seasoned, sliced
4 cupsfresh kale
chopped
1 cupfennel bulb
diced
1shallot
diced
4 clovesfresh garlic
minced
0.5red onion
thinly sliced
1 x 12 ozcan diced tomatoes
12 ozcan tomato sauce
¼ cupsfresh basil
torn into small pieces
2 Tbspwhite wine
1 lbbowtie pasta
cooked al dente
1 Tbspolive oil
1 Tbspbutter
1 Tbsppine nuts
8 ozfresh mozzarella
sliced
½ cupshredded parmesan
Instructions
Step 1
Boil pasta in large pot until cooked al dente, set aside. Add butter and olive oil to a large skillet over medium-high heat. Add onions, shallots and garlic; saute until onions are translucent. Add chicken sausage and cook for 5-7 minutes. Add kale, basil and white wine; cover for 5 minutes to let the kale soften. Add diced tomatoes and tomato sauce; simmer for 10 minutes. Add pine nuts and stir until incorporated. Add bowtie pasta to 9x13 baking pan. Cover with sauce mixture, mozzarella and Parmesan. Bake in oven at 400F for 15-18 minutes or until cheese is bubbly and browned.
