Instructions
Step 1
Preheat the oven to 350 degrees. Grease an 8x8 square baking dish with cooking spray.
Step 2
Mix the wet ingredients, in a large bowl, until smooth and combined: milk, coffee, maple syrup, eggs, and vanilla.
Step 3
Add the dry ingredients to the wet and mix until well combined: oats, espresso powder, baking powder, and salt.
Step 4
Fold in the chocolate chips. Pour the mixture into the prepared baking dish and smooth the top.
Step 5
Bake 25-30 minutes or until the oatmeal is set and slightly golden on the edges, and a knife comes out mostly clean with just a few crumbs attached. Cool for 5-10 minutes.
Step 6
Serve with greek yogurt or just out of the baking dish.
