Healthy Mini Banana Muffins

My all time favorite banana bread recipe is Gold Medal's, but I have to pack nutrition into everything I feed my child, so I created this protein heavy recipe.

Instructions

Step 1
Preheat oven to 425°F
Step 2
Mash bananas in large mixing bowl. Add melted butter and sugar. Mix until smooth
Step 3
Add eggs to banana mixture, and mix until smooth. Add Greek yogurt and do the same.
Step 4
Add vanilla, cinnamon and nutmeg. Incorporate evenly
Step 5
Add blended oats, chia and wheat flour to the bowl. Add baking soda and salt. Mix altogether.
Step 6
If you choose to add nuts or chocolate chips, fold them in now.
Step 7
Spray your mini muffin tin, or add liners
Step 8
Scoop 1 tbsp of batter into each mini muffin cup.
Step 9
Bake for 5 minutes at 425°F, then drop temperature to 350°F for another 10 minutes of baking.
Step 10
Remove and let cool for at least 5-10 minutes.
