Instructions

Step 1
Combine paprika, garlic powder, onion powder, cayenne pepper, and black pepper in a small bowl. Rub this spice mix evenly over both sides of the catfish fillets.

Heat olive oil in a skillet over medium-high heat. Once hot, add the catfish fillets and cook for about 3 - 4 minutes on each side or until the outside is crispy and the fish flakes easily with a fork.
Step 3
In a large pot, bring the low-sodium broth to a boil. Add the chopped collard greens, reduce heat to low, and simmer for about 15-20 minutes until the greens are tender.
Step 4
Serve the blackened catfish with a side of braised collard greens.
