Filling

450gspinach

2 bunchesflat leaf parsley
chopped

1yellow onion
large, chopped

2garlic cloves
minced

2 Tbspextra virgin olive oil
good quality

4eggs

300gfeta
Greek

2 tspdried dill

freshly ground black pepper
Crust
450gpre rolled filo

extra virgin olive oil
for brushing
Instructions
Step 1
Preheat oven to 160°C

Step 2
In a large bowl mix all the filling ingredients well.



Step 3
Brush the bottom & sides of a 35cm x 23cm baking dish with olive oil. Line the dish with two layers of filo letting them cover the sides of the dish to fold over at the end. Keep layering the sheets, brushing with oil each time until 2-4 sheets of the pastry is left.

Step 4
Evenly spread the filling over the crust and top with two more layers of pastry brushed with oil. Continue layering the pastry until all gone, sprinkle with water and then bake until filo is golden in the centre of the oven (around 60mins)
