Instructions

Step 1
Preheat your oven to 375°F (190°C) and lightly grease a baking sheet or loaf pan.

In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, parsley, garlic, egg, oregano, salt, and black pepper.

Add milk to the mixture and gently combine until evenly mixed.

Form the mixture into small loaf shapes or place it in the prepared loaf pan, creating mini meatloaves.

Heat olive oil in a skillet over medium heat and quickly sear the meatloaves on all sides until golden, about 2-3 minutes per side.

Transfer the meatloaves to the oven and bake for 20-25 minutes until the meat is fully cooked.
Step 7
If using, sprinkle grated mozzarella on top during the last 5 minutes of baking, allowing it to melt.
Step 8
Remove from the oven, garnish with more parsley, and serve warm.
