Ingredients

6roma tomatoes
halved
4carrots
peeled & halved
1red pepper
quartered
1white onion
halved
2garlic bulbs
1yellow zucchini
sliced into medallions
1green zucchini
sliced into medallions
2 Tbspolive oil
salt
to taste
pepper
to taste
1 tspitalian seasoning
1 tspdried oregano
2 ½ cupswater
boiling
1 cupmilk
of choice
fresh basil
Instructions
Step 1
Preheat oven to 425 degrees.
Step 2
Arrange all vegetables on a baking sheet lined with parchment paper. Drizzle olive oil over vegetables, then sprinkle salt, pepper, Italian seasoning, and oregano over vegetables.
Step 3
Roast vegetables for 45 minutes.
Step 4
Boil water in a large stock pot, then add all of roasted vegetables.
Step 5
Blend with an immersion blender.
Step 6
Stir in milk.
Step 7
Serve with crusty bread.
