Sweet potato tuna patties

Instructions

Step 1
Cut the sweet potato into chunks then place in a microwave dish with water. Cover and microwave on high for 4-5 minutes until tender (steam/ boil on the stove works too).
Step 2
Drain the sweet potato and place in a large bowl. Mash the sweet potato with a fork then set aside to cool slightly.
Step 3
Drain the tuna and add to the bowl along with the remaining ingredients. Season with salt, pepper and chilli powder to taste.
Step 4
Mix until well combined then shape the mixture into 12 patties (approx 1.5cm thick).
Step 5
Heat the olive oil in a fry pan and cook the patties in batches until golden and heated through.
Step 6
Serve with salad, lemon juice, mayo or sauce of choice.
