200g2 % cottage cheese
75gfat free greek yogurt
2 Tbsenchilada sauce
4 Tbssalsa
garlic

Chicken
Step 1
Tenderize by poking holes with a fork all along chicken.
Step 2
Add lime juice and seasonings. (Optionally sub the lemon pepper seasoning for taco seasoning)
Step 3
Cook the chicken either in a pan over medium heat for 5 minutes then flip, or in an air fryer.
Sauce
Step 4
Add cottage cheese, greek yogurt, salsa, enchilada sauce, and seasonings to a blender. Blend until smooth.
The Rest
Step 5
Once cooked, cut the chicken into bite-sized pieces and add to a bowl with the sauce and shredded cheese.
Step 6
Mix thoroughly then add to a cooked flour tortilla.
Optional
Step 7
Add half or one whole can of black beans to the mixture to add more fiber.
Step 8
Add fresh lettuce, cilantro, or diced tomatoes to add color.
Step 9
Add mexican rice to add more substance and increase the servings.
