Instructions
Apple compote
Step 1
Peel and dice the apple.
Step 2
Heat the butter in a pan over a medium heat. Add the apple pieces, cinnamon and sugar and fry gently for approx. 2-3 mins.
Step 3
Add 2 tbsp water and simmer again for another 1-2 min.
Step 4
Finally, mix the remaining water with the starch and add to the apple compote. Stir well and simmer for another 1 min.
Cream cheese - butter cream
Step 5
Melt the butter in a pan on a medium-high heat until it is golden brown. This gives it its special aroma.
Step 6
Place the butter in the freezer for about 10 minutes to firm up.
Step 7
In the meantime, mix the cream cheese with the sieved powdered sugar and vanilla extract until creamy.
Step 8
Then add the butter and stir again until creamy. Chill the cream in the meantime.
French toast
Step 9
Cut three approx. 5 cm thick slices from a brioche bun.
Step 10
Cut these slices lengthwise down the middle to create a small pocket.
Step 11
Fill the brioche slices with the apple compote. The filling should not swell out of the top. Leave 1 tbsp of apple compote for the decoration.
Step 12
Whisk the eggs with the milk, sugar and cinnamon in a casserole dish.
Step 13
In the meantime, melt the butter over a medium-high heat.
Step 14
Wilt the brioche slices in the egg mixture so that they are covered on all sides.
Step 15
Place the brioche slices in the pan and fry on all sides until golden brown.
Step 16
Place a slice of brioche on a plate and arrange with some cream cheese-buttercream and apple compote. Do the same with the remaining slices. Enjoy!
