Instructions

Broth

Step 1
1. Adjust oven rack to middle position and heat oven to 425 degrees.

2. Combine mushrooms, onion, celery, carrot, oil, tomato paste, worstershire sauce and garlic in large roasting pan.

3. Roast until vegetables are tender and very dark in color, 35 mins.

4. Add water to pan.

5. Continue to roast until water is reduced by half, 30 mins.
Step 6
6. Strain through fine-mesh strainer and discard solids.

7. Stir in salt and nutritional yeast, let cool completely.

Soup

Step 8
Preheat the oven to 350. Peel the onions, cut them in half from pole to pole, and slice as thinly as possible. In a heavy soup pot, heat the butter. Remove the pot from the heat.
Step 9
Return the pot to the heat and add the onions. Season with salt and pepper. Stir in the sugar and continue to stir over medium high heat until the onions have browned, about 15 minutes.
Step 10
Blend in the corn starch. Gradually add the stock while stirring and bring the soup to a boil. Reduce the heat to a simmer and cook uncovered for 30 minutes.
Step 11
Ladle the soup into warmed bowls.
