Roasted Maple Glazed Salmon with Sweet Potato Slices

Instructions

Step 1
Heat oven to 425F.
Step 2
Combine syrup, Dijon salt pepper and lemon zest in a small bowl. Stir together and set aside. 
Line a rimmed baking sheet with aluminum foil and spray with cooking spray.
Step 3
Toss the sweet potato slices with olive oil, salt, pepper, cumin and paprika and arrange on the sheetpan.
Roast for 15 minutes, or until fork tender.
Step 4
Remove sweet potatoes from the oven and turn each one over. Place the Salmon in the center of the potatoes and spoon over half of the glaze. Lay lemon slices on top and broil for 7-10 minutes, or until salmon flakes easily.
Step 5
Remove from broiler, pour remaining glaze on top and sprinkle with chopped parsley
