Instructions
Step 1
Preheat waffle maker
Step 2
Sift together flour, cinnamon and baking powder. Mix with sugar and salt. Set aside.
Step 3
In a small bowl, beat egg whites until stiff; set aside.
Step 4
In a medium bowl, beat egg yolks well. Stir in milk and oil and whisk till emulsified.
Step 5
Toss the apple in the sifted dry ingredients until coated and evenly distributed throughout.
Step 6
Immediately add gradually egg yolks and mix until just moistened (be careful not to over mix).
Step 7
Fold in one big spoonful of egg white to soften the batter, you can be quite quick and don't have to be too careful. Then gently fold in the remaining egg whites.
Step 8
Brush both sides of waffle maker with butter
Step 9
Spoon into waffle maker to just below lip. Bake for at least 4-5 minutes, until crisp and brown. Turn over after about 2 mins when the bottoms have set. (They'll be done when waffle iron is no longer emitting steam)
