1 lbspiced turkey sausage

5cloves garlic

8 cchicken stock
divided: 1 1/3 cup for quinoa, 6 2/3 cup for soup
1 x 28 ozcan of fire roasted tomatoes chopped

2 Tbstomato paste

⅔ cquinoa

1 Tbsbasil

1 Tbsoregano

½ tspfennel seed

½ tspsalt

¼ tspCalabrian chili flakes

baby spinach

1can chickpeas
rinsed

1can kidney beans
rinsed

1 cupfrozen cut green beans
2zucini
cut 1/2 inch pieces

½ cupred wine
Instructions
Step 1
Remove castings from sausage and saute in a separate pan until browned. Break up the meat as it cooks.
Step 2
Rinsed quinoa. Add 1 1/3 cup chicken stock and quinoa to pot and bring to a boil. Reduce to a simmer and cook for 15 minutes.
Step 3
In a large dutch oven, saute carrots, celery, onion, and garlic until translucent.
Step 4
Add the rest of the stock, tomatoes, tomato paste and spices, and cooked sausage. Bring to a boil. Then reduce to a simmer for 30 mins.
Step 5
Add spinach and beans, bring to a boil, then let it simmer until green beans are cooked -aprox 5 minutes.
Step 6
Add the quinoa and adjust the seasoning. Serve with parmasan cheese.
