Instructions
Step 1
chop vegetables and crush tomatoes






Step 2
cook pepper and onion in olive oil in a pan on medium heat until onions are translucent





Step 3
add garlic and seasonings; mix well







Step 4
add tomatoes and change heat to low; cook down tomatoes until sauce has desired consistency



Step 5
make 4 holes in the sauce and crack one egg in each; cover with lid until eggs are cooked (about 5 min)



Step 6
garnish with parsley and (optionally) cheese
